Leftover Sirloin Steak Burritos for 2

This recipe showed up on my Facebook feed tonight from my mom.  Something that she just happened to throw together for dinner!
Slice the steak thinly. Rub in 2 T. of taco seasoning to the meat. Place in small dish and add enough water to cover meat. Stir to mix. Put in frig and leave for 30-60 minutes.
After marinating, in a frying pan, melt 2 T. Butter, add 1/2 c. chopped onion and 1/2 c. chopped green pepper or Jalapeno. When onion is translucent, add 1 t. Cumin, 1/2 t. Garlic pwd., 1/2 t. Red Pepper flakes, 1/4 t. Chili pwd and 1/4 cup Salsa. Cook until heated thru. Turn heat to low/warm.
In another skillet, add 1 T. Olive oil, when warm, add the steak and cook long enough to heat thru.
When the steak is done, place on flour tortilla, add onion/pepper mixture. Then add a heaping tablespoon of sour cream on top, then a handful of shredded cheese.
Roll them up and throw another handful of cheese on top.
Cook at 350 for 15 minutes or until cheese on top is melted.

Pumpkin Bars

  • 4 eggs
  • 1 2/3 cup sugar
  • 1 cup vegetable oil
  • 1 16 oz can pumpkin
  • 2 cups flour sifted
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 3 oz cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • 2 cups powdered sugar

1.  In a large bowl beat eggs, sugar, oil and pumpkin until fluffy.

2.  In a medium sized bowl stir together flour, baking powder, cinnamon, salt, soda, and spices. Add to pumpkin mixture.

3.  Spread in greased 15×10 inch pan. Bake at 350 for 25 minutes, or until lightly browned. Cool.

4.  For frosting cream together cream cheese, butter and vanilla. Gradually add powdered sugar. Beat until smooth and creamy. Frost on pumpkin bars.

Cheesy Taco Bake

3/4 bag spiral noodles 1 lb. of ground beef 1 pkg. taco seasoning 1 cup water 1/2 pkg. cream cheese 1 1/2 cup shredded cheese 1.  Boil pasta according package directions. 2.  Brown ground beef  and drain.   3.  Mix taco seasoning and 1 cup water with ground beef for 5 minutes. 4.  Add cream cheese to beef mixture and stir until melted.  Remove from heat. 5.  Put pasta in casserole dish, mix in 1 cup cheese.  Top pasta cheese mixture with beef mixture.   Gently mix.  Top with remaining cheese. 6.  Bake at 350 degrees uncovered for 15-20 minutes. … [Continue reading...]
